You too can celebrate Mardi Gras in your kitchen

I have never been to Mardi Gras. As much as I love New Orleans and spend at least ten days a year there, I have not taken part in, what I hear, is the grandest festival of them all.

Why do I love New Orleans? Well, my number two bestie lives there, my daughter goes to school at Xavier and of course, the food! Any trip to NO includes ridiculous amounts of tasteful gluttony. That means I eat as much as I can at as many places that I can. My last trip right after Christmas included one of my favorite breakfast spots in the world. Refuel wrote the book on grits. No, seriously. Who makes a dish with avocado gracing over grits???!!!! Refuel does, and they do it well.

But back to Mardi Gras. Never been, want to go but won’t make it this year. So instead, I’m gonna cook like I belong. I’m gonna spend the week making traditional Mardi Gras dishes because, well, it’s fabulous food and it’s festive.  

I will start with Crab Beignets. Then Crab & Avocado on Tomatoes, Then Shrimp Etouffee. Then Mini King Cakes and finally….Chocolate Bread Pudding! Not sure how this will turn out, but it’s the effort that counts, right? Here’s a quick recap.

Secondly, no Mardi Gras salute would be complete without daiquiris. For whatever tradition this honors, I am so glad they do! I am going to make this cocktail and drink it to honor all the real residents of New Orleans. For the all the 20-somethings dancing with beads on balconies and flashing passers-by, this is NOT for you!

After making and indulging in these dishes, I am not sure why only Fat Tuesday gets credit; I’d be fat for a whole week if I was down there! The parades and the pageantry must be incredible and I promise to get down there at some point, but for today, I am all about making my kitchen as much as about Mardi Gras as possible.

    I admit until I moved to the US I’d never even heard of Mardi Gras. Coming from the UK we call it Shrove Tuesday and things are celebrated a little differently. Certainly the food isn’t as rich! More about crepes/pancakes!

    Happy Fat Tuesday! I have never been to NOLA, but I will make it there one day! Not sure that I am up for Mardi Gras – But any other time of year I would love to enjoy the food, drinks, and scene!

    I would love to make these for my fiance! He’s from Mississippi, has family in Louisiana, and even worked in New Orleans for a few years. He brought home a King Cake last night and was so excited to at least have some [deep] southern tradition in our house (we live in VA). I’ll definitely be checking back and making some of these recipes. 🙂

    Thank you for sharing all these great recipes. I have only been to New Orleans one time, never to Mardi Gras, but I’ve always wanted to go. Some of the best food I’ve ever eaten has been in New Orleans.

    I want to make the Crab Beignets. I always fascinate by New Orleans cuisine ever since I watch a cooking programme about New Orleans food. I made Gumbo once, and gone crazy about it. Delicious!

    Oh my word! This post has me salivating!!! A staple of my childhood was my grandmothers grits, and I’ve never had avocado on but it sounds amazing. You’re quite the cook, btw!
